Ingredients:

  • ½ cup oats (rolled or quick)
  • 2 tbsp dried chamomile flowers
  • 1 tsp dried lavender
  • Muslin bags or small muslin squares tied with string

Instructions:

  1. Mix oats, chamomile, and lavender in a bowl.
  2. Spoon into muslin bags or wrap in muslin squares and tie with string.
  3. Add a gift tag with instructions: “Steep in warm bath water for a relaxing soak.”

Ingredients:

  • Honey Lavender Shortbread, Chamomile Lemon Meltaways, or Vanilla Bean Sugar Cookies (baked and cooled)

Instructions:

  1. Layer cookies neatly in jars or fill cellophane bags.

🍗 Gentle Roast Chicken with Lemon & Thyme

Why It’s Calm

A lighter, aromatic alternative to turkey — this roast chicken is tender, flavorful, and easy to prepare. Minimal fuss, maximum comfort.

Ingredients:

  • 1 whole chicken (about 4–5 lbs / 1.8–2.3 kg)
  • 2 lemons, halved
  • 1 head garlic, halved crosswise
  • 4–5 sprigs fresh thyme
  • 2 tbsp olive oil
  • Salt & pepper, to taste

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Pat chicken dry, season inside and out with salt and pepper.
  3. Stuff cavity with lemon halves, garlic, and thyme.
  4. Rub olive oil over skin.
  5. Roast in a roasting pan for 1 hr 20 min – 1 hr 30 min, basting occasionally, until internal temp reaches 165°F (74°C).
  6. Rest 15 minutes before carving.

Serving Tip: Slice and serve with pan juices or a simple gravy.


🥕 Rosemary & Honey Root Vegetable Tray Bake

Ingredients:

  • 4 carrots, peeled and cut into sticks
  • 3 parsnips, peeled and cut into sticks
  • 2 sweet potatoes, peeled and cubed

  • 2 tsp fresh rosemary, chopped
  • Salt & pepper, to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Toss vegetables with olive oil, honey, rosemary, salt, and pepper.
  3. Spread in a single layer on a baking sheet.
  4. Roast 25–30 minutes, tossing halfway, until tender and golden.

Serving Tip: Serve warm as a side to Gentle Roast Chicken or on its own for a light, calming meal.

  • Salt & pepper, to taste

Instructions:

  1. Whisk olive oil, honey, mustard, salt, and pepper to make dressing.

  • 2 tbsp dried chamomile (from tea bags), finely ground

Instructions:

Disclaimer I didn’t publish this at the time but I think its worth back padding the 2021 collection of posts for you to revisit. I looked at my blog and not blogging in 2021 didn’t sit with me so this is the calm Christmas collection I wish I posted then.


🎄 Christmas 2021: The Year of Calm

The world slowed down in 2021. After the uncertainty and noise of the year before, Christmas was no longer about squeezing in as much as possible — it was about creating space to breathe. Families chose smaller gatherings, simpler menus, and traditions that felt restorative rather than rushed.

We called it “The Year of Calm.”

This was the year when cozy routines mattered more than extravagance. Instead of endless shopping lists and complicated feasts, people leaned into:

Soothing flavors — honey, vanilla, lavender, citrus, chamomile
Comfort rituals — baking bread, stirring a slow pot of stew, decorating cookies mindfully
Simpler tables — one beautiful roast chicken instead of three mains, a single glowing centerpiece instead of clutter
Moments of pause — sipping tea by the fire, wrapping gifts with care, listening to music instead of rushing through it

Calm didn’t mean boring. It meant intentional: choosing recipes and traditions that nourished, restored, and allowed us to truly enjoy the season.
